11am – The Talbot Hotel – Head chef Dan Graham
Originally from near Hexham in Northumberland, Dan’s career has taken him the length and breadth of the country. His journey included training at Roux restaurants in London and working for such well known establishments as Le Gavroche where, he says, he was transformed from being a good chef to a great chef. A finalist and runner-up in the BBC series of Master Chef: The Professionals, Dan is well used to the limelight.
12pm – Paul Nicholson – Butchery Know-how
Paul is a farmers son who was brought up on the Yorkshire Wolds. Paul has farmed a small holding of sheep for a number of years and experimented with different breeds of sheep to learn more about the effect of breeding on the final meat product. Paul started his butchery career at Frank Turners in Rillington before moving on to the farm shop at Castle Howard. Now Paul uses his knowledge gained over 25 years in the industry in his role as a Butchery Consultant. He is keen to help the butchery profession to grow and develop with the changing demands of the meat consumer.
